Baileys Chocolate Orange Trifle and Blackcurrant Macarons

My special desert for after Christmas Eve dinner was something I created, called bailey’s chocolate orange trifle.

The bottom layer is a Victoria sponge, which was soaked in a tablespoon of Baileys Irish Cream. I then surround the sponge with some raspberries. On top of the sponge is a chocolate custard which I infused with orange. I finished it off with whipped cream and topped it with a little chocolate 🎄 tree for some festive decoration. It is so decadent, but oh so worth it.

My second after dinner treat were some macarons that I filled with a dark chocolate ganache that encases blackcurrant jam in the middle. As you can see in the pictures below my snowman ⛄️ friend could not wait he had to eat one.

They are decorated with chocolate as one cannot get enough and some Christmas sprinkles to give them a little festive look. The blackcurrant combination with the dark chocolate is a winner. It gives them a very rich and decadent flavor. I love blackcurrant jam, as it brings back memories for me of growing up in Ireland. I remember having blackcurrant sandwich’s allot growing up. It’s amazing how some foods bring back childhood memories. Do you have a food that does it for you?
