Caramel & Apple a perfect Fall/Autumn flavor combination

This time of the year there is nothing better than caramel apples. Since I love this combination, I though why not turn it into a cupcake.

These were definitely a treat and hit the spot. Kids will especially love them this time of year. The recipe makes 24. To give mine an extra fall look, I colored the frosting and used fall/autumn colored sprinkles. You could do something similar or your own design. These were another hit at church today for coffee hour.

Ingredients for cupcakes

200g of room temperature unsalted butter

300g self raising flour

300g granulated sugar

8 tbsp of heavy cream

4 large eggs

1 tsp pure vanilla

Ingredients for apple filling

4 Granny Smith apples

125g granulated sugar

1 tsp apple pie spice

Ingredients for frosting

24oz of mascarpone

24oz whipping cream

8 heaping tbsp of confectionery sugar

Food coloring if you want to add a splash of color to you frosting

Sprinkles

Directions

Preheat oven to 355F and place cupcake holders in muffin tin.

Measure all cupcake ingredients and place in a large mixing bowl. Blend with a hand held mixer on high speed until well combined and smooth. Evenly spoon batter between cupcake cases.

Place cupcakes in preheated oven and bake for 20-25mins. My oven takes 20mins. Remove when risen and a nice golden brown. When baked remove from over and place on a wire rack to cool for at least 30mins.

While the cupcakes are baking make the caramel and stewed apple filling. For the filling core and peal the apples. Cut applies into small pieces then place in saucepan with sugar and spices. Cook on medium heat for 10-15 mins until apples form a sauce with some small chucks. Once cooked leave to side to cook with caramel.

For the frosting place mascarpone in a mixing bowl and whisk on medium speed for about 30 seconds. Then add even cream and confectionery sugar and whisk until thick and creamy. Add food coloring if desired or just leave it white.
