Not just your plain old banana loaf cake

I had some very ripe bananas that my husband wanted me to use. I did want to make just a plain old banana loaf cake so I added some extra ingredients to liven it up.

For today’s bake I made an absolutely scrumptious cranberry and walnut banana loaf cake. The added ingredients give the cake some extra texture and more importantly flavor.

This is an easy bake and takes no more than one hour 30 minutes at most. Below is the list of ingredients and simple directions, if you would like to try it yourself. My recipe is an adaptation of a Mary Berry banana loaf.

Ingredients

100g of soft unsalted butter

175g of granulated sugar

2 large room temperature eggs

2 very ripe bananas mashed

225g of self raising flour

1 tsp baking powder

75g of chopped walnuts

50g of dried cranberries

4 tbsp of heavy cream

Directions

1. Preheat oven to 355F and grease a two pound loaf tin.

2. Measure all ingredients except the walnuts and cranberries and place in a mixing bowl and beat with a hand mixer for about two minutes until we’ll combined.

3. Add walnuts and cranberries to mix and then mix for about 20 seconds. Then spoon mixture into prepared tin and level the surface.

4. Bake in the preheated oven for about 1 hour or until golden brown on top and a skewer comes out clean when inserted in the middle. Let came cool in Tim for 5 minutes once your take it out. Then remove from baking tin and leave to cool for about 1 hour before eating.
