My first bake of 2021 was a back to basics one. I got Mary Berrys baking bible book for Christmas, so I made a classic Swiss roll filled with raspberry jam and fresh cream.
I have to say the simplest of bakes are often the most delicious 😋. Don’t you agree? When you over complicate things, like we so often do in life, it just takes away from the end result.
I had some issues with rolling the first sponge and actually had to make a second one. I found on the second go around that waiting for five minutes after I took it out of the oven it worked.
With my baking I have allot of goals planned for 2021. I will share more details with everyone tomorrow and a little video as I have some exciting news to share on something I have being working on.

Thank you for your comment. The rolling is the hard part. I actually had to make a second sponge as the first one didn’t work right. The joy of baking is that things do not always come out right as we see on the Great British Baking Show.
Looks delicious!! I can’t imagine trying to roll the sponge cake.
