Mary Berry’s wonderful Honey Glazed Walnut Bread what a treat

Today, I started my journey of making breads using different flours and adding nuts and seeds for flavor. This is something I have wanted to start for a while but was a little hesitant. I got Mary Berrys Baking Bible book this past Christmas, so I decided to try a recipe from her bread section. It did not disappoint.

I tried my hand at created a little video so you can watch and follow along as I go through the steps to make this bread. It is an amateur production but will hopefully allow you to see the work that goes into making a bake happen and not just the pretty pictures at the end. It was different from some other breads I have baked, as this one was promoted only needing one proof. It said in the book it only takes 1 1/4 hours but it took me 2 1/2 partially because I needed to let it proof for 90 minutes before it was ready. Proofing times can and do vary a little so you have to use your own judgement too when baking. Like allot of things in life you also have to use your judgement.

The only real challenging part, was incorporating the walnuts and sunflower seeds into the mixed dough. This took a while, but I got through it. I wonder is there an easier way? If you have any suggestions leave me a comment below. I was concerned as I wanted to make ensure the nuts and seeds were evenly disbursed.

I was very happy with the end result as you can see in the pictures below. I just had a slice with some butter and it was amazing. Home baked bread is so much better and healthier than store bought. It has a wonderfully soft chewy texture and the walnuts give it a nice distinct flavor that is not too overpowering. I think it would be great to use for a sandwich or just to have a slice with a soup or salad. It says in the book it makes the best toast, so I will have to try that in the morning and report back.
